Here’s a little ditty I whipped up the other night. I’ve called it Cookies and Cream Pudding. But there’s no cookies. And there’s no cream. It’s damn good, though. Did I mention it’s easy, healthy and quick?
Great little dessert
This version of cookies and cream pudding is the typical invention. It happened by accident.
We were out of almond milk, so couldn’t really make a smoothie.
And at the time, I was testing a Blendtec Twister Jar recipe for Banana Iced Cream. I didn’t love the Twister Jar (ended up switching to my Vitamix). But I absolutely loved this recipe. Great little dessert.
Useful tips for Cookies and cream pudding
You gotta have frozen bananas.
And giving them a rinse under hot water helps break them into small pieces by hand.
A high-end blender helps. Unless you like the smell of a burning motor.
Super healthy, spoonable dessert!
- frozen banana - 1 whole
- raisins - 1/4 cup
- raw almonds - 1/4 cup
- honey - 1 T (optional)
- Throw ingredients into your blender.
- Mix on medium speed for 10 seconds (or until creamy).
NOTE: You can freeze this and enjoy later. But it’s undoubtedly better eaten right away.
