Mahi Mahi for Dinner Dinner When You’re Busy Busy
I was skeptical that frozen mahi mahi from Trader Joe’s could be good. The directions didn’t even show how to grill from frozen. So, I had to figure it out. Fortunately, it was actually easy to make mahi mahi this way. Plus, the simple recipe I used was tastier than expected. Maybe next time I’ll try it with, soyaki, my garlic lime aioli, or something like this Tomatillo Sauce.
This dinner recipe fit my lifestyle perfectly. No planning. No prep. No special ingredients. Just dinner. Of course, fresh fish is always better. But, grilling from frozen is amazingly flexible. It’s like video on-demand. Great for dates or by yourself.
Useful Tips for Grilling Frozen Mahi Mahi
The frozen mahi mahi fillets are often tough to break apart. Rinse ’em if you have to.
Get a big sheet of tin foil. Pour extra virgin olive oil on top and bottom.
Rub it around a bit.
Season her up. Keep it simple. Salt, pepper, extra virgin olive oil, done. Both sides, if you can.
Wrap the foil tightly. Any opening will let air in and heat out.
Double wrap it (I have so many jokes running through my head right now). Ensures air doesn’t get out.
Flip the aluminum foil fish package. Unlike swordfish, mahi mahi seemed to need a flip.
Use a grill tongs to check. It should be opaque, white and moist. Don’t overcook!
Serve it simply. I made it with salt, pepper, lemon pepper, olive oil and lemon juice. If you have an extra minute, try one of these fish sauces.
Served below with a Pomegranate Cucumber Tomato Avocado Salad .
Easy and quick grilled mahi mahi. Uses frozen fillets from Trader Joe's (or your local grocer).
- mahi mahi fillets
- extra virgin olive oil
- lemon pepper
- lemon juice
- Place frozen mahi mahi on aluminum foil.
- Rub extra virgin olive oil on top and bottom.
- Add seasoning
- Wrap foil around fish. Make air tight.
- Wrap again (double wrap).
- Grill on high for 12 minutes.
- Flip entire fish foil package and grill for 6 more minutes.
- Open package and check fish.
- Be happy.
