You know that feeling when you first get to Vegas? Excited, energized, ready. So much you want to do, so little time. Impossible to sleep despite being mentally and physically exhausted. That’s how I feel every day. Except it’s not from drinking, gambling and breathing copious amount of oxygen. Well, mostly it’s not.
Here are real emails I’ve gotten recently. Enjoy.
Q: What the hell is quinoa?

LG: Quinoa is like rice but better for you. You can make it into a casserole. I created quinoa casserole based on the baked rigatoni you used to make. I know you like a good casserole, Paps.
Q: Lenny, The photos on your blog are really excellent. I’m confused, though, the recipes don’t seem to tell me how to actually cook anything. I want to make that Quinoa dish but I don’t know what you mean by “Cook the Quinoa” … Do I boil it? Do I bake it? Actually, can I deep fry it?

Q: Did you know you’re supposed to wash quinoa before cooking it?

LG: I had no idea, actually. My guess is that it can be done much quicker than this guy’s method of cleaning quinoa.
Q: Hi Lenny! Great website 🙂 I’m obsessed with quinoa. It not only has the protein and one who doesn’t eat much meat craves, but it’s high in magnesium, which helps to curb migraines.
LG: Quinoa helps curb migraines? Good to know.
Q: Here’s a quinoa recipe I made up. “Quinoa and Turkey Stuffed Peppers”
4 lg bell peppers, asst colors
1 lb lean ground turkey
1 can chickpeas, drained and rinsed
1 cup packed chopped fresh spinach
3/4 cup quinoa (uncooked)
1 tbsp ground cumin
Salt & pepper
2 tsp olive oil + some for drizzling over peppers
4 oz reduced fat feta (optional)
1 jalapeño, finely chopped (optional)
Preheat oven to 400F
Remove tops from peppers and take out seeds, set aside
Prepare quinoa according to package instructions, add cumin
Brown turkey, season w salt & pepper
In lg mixing bowl, combine quinoa, turkey, chickpeas, spinach, feta, and jalapeño, olive oil
Fill peppers with mixture and place in pan. Drizzle w olive oil
Bake for 55-60 min

Q: How often do you workout? Like every day?
LG: My goal is 4x during the work week. Never on Wednesdays. Just like the tips & tricks I send out to the lifeisnoyoke list.
Q: How come you don’t workout on Wednesdays?
LG: I figure if I am never having to drag my ass to the gym more than two days in a row, it’s more likely I don’t give up. It’s either “one more day left” or “tomorrow I get a break”. When something like working out never happens more than twice in a row, I’m less likely to give it up. Yes. Just like my emails.
Q: When you make smoothies do you have to turn your blender off and on a bunch of times? My cheap one works, but every morning I have to start it, stop it, mix it. How come the smoothies you make for me at your apartment are 100x better? Like, the chunky stuff still stays a little chunky but everything else is amazingly smooth, even the ice. How come yours are not complete mushy froth like mine? I’m about to just say f@ck it. I’ve had two cheap blenders and I should just get a good one because this one makes me nuts.
Q: You didn’t send an email yesterday. Kinda like leaving something that fell on the floor and seeing how long it takes for someone to pick it up?
