This easy, quick and healthy salad is:
- Full of protein.
- Easy as hell to make.
It’s got grilled chicken, grapefruit and arugula.
Let’s call it the Poolside Salad.
Dear poolside grill
Please add this to your menu. If not, that’s okay. I’ll just make it myself. It takes two minutes, assuming I already have grilled chicken.
Most salads are not enough to fill me up. At the pool, especially, I get a monster appetite. This one fills me up but isn’t junky at all.
Of course, you don’t need a pool to enjoy.
You just need to be in the mood for an easy, healthy and quick meal.
Useful tips for Poolside Salad
Make the chicken in advance if you can. And when slicing the grapefruit, cut the peel off, first.
Delicious and refreshing salad.
- grilled chicken breasts - sliced into small pieces
- grapefruit - sliced into small pieces
- arugula - a few hand fulls
- extra virgin olive oil - 2 parts
- orange muscat champagne vinegar - 1 part
- pepper - to taste
- Throw ingredients into a bowl.
- Toss gently.
- Eat, poolside.
- Be happy.
NOTES: Time to complete assumes you already have grilled chicken. Otherwise add 20 minutes.
