How About Quinoa Burrito Bowls?
Oh man. I have no food. What the heck am I going to make for dinner? I need something. Anything. But have nothing. Maybe I’ll just go to Chipotle?” And that, my friends was how the quinoa burrito bowl was born.
Quick dinners are easy to find. But when I have one as flexible as a quinoa burrito bowl, it’s pure gold. I take beans and quinoa (non-perishable) and build from there. What did I have that was fresh? Well, more like what did I have that was about to go bad. An avocado? Yup. Some cherry tomatoes? Yup. Some kale? Yupsir!
I made this quinoa burrito bowl vegetarian this time. But certainly it would also be good with some grilled chicken. And without a doubt, a giant glass of two-second lemonade.
Basically, take your Chipotle order and swap quinoa for rice. Now it’s gluten free. And homemade. And if it’s made with chicken, you can avoid GMO’s!
If you make a large enough batch of quinoa, you can save time when you make another quinoa burrito bowl later in the week.
Experiment with spices. But whatever you use, be sure to add a little salt. The avocado needs it.
Any quinoa will do. This is red.
Yeah, I would have used black beans, but was out. These were fine.
Sauteed kale is incredible. I should write an entire post on how awesome it is.
And it’s not an extra 2.95 for guac!
I used sriracha. Any hot sauce will do.
Throw in some tortilla chips to give it a crunch.

- hot sauce
- tortilla chips
- chili powder
- Make some quinoa
- Heat some beans
- Sautee some veggies
- Slice some avocado
- Add it all together including spices.
- Be happy.
