Spaghetti squash spaghetti with vodka sauce and broccoli
“Penne Vodka.” The order I heard a million times. The order that became my go-to. The order lost for 10 years after becoming 85% gluten free and dairy free. Finally, pasta with vodka sauce is back. Except this time, with spaghetti squash instead of pasta. And vodka sauce won’t kill you (as fast). Here it is: Spaghetti Squash Spaghetti with Vodka Sauce and Broccoli.
This thing ate like spaghetti. It’s def filling. Hearty. But, I didn’t feel stuffed after eating 3/4 of a whole spaghetti squash.
Even though it takes an hour start to finish, it still felt very easy. And satisfying.
Highly recommended while they’re still available. Right in front at TJ’s.

Use standard method to bake the spaghetti squash. One hour start to finish, but only a few minutes of real work. And super rewarding.
Any vegetable will do. I used broccoli cause it’s easiest and more filling, nutritious. Standard sautee under medium heat.
Dump it on the spaghetti.
This is vodka sauce I made from scratch in my Vitamix. Absurdly easy and good.
One spaghetti squash was enough for the two of us. And with this sauce recipe, there was tons of extra sauce. Will be good for another round of spaghetti (or a dinner of four).
And I’m a hero. The girlfriend and I get fed. Very well indeed.
