Beet Hummus

Earthy, colorful, and bright dip/spread that's full of plant goodness.

Ingredients:

  • olive oil - 2 Tbsp. (30 mL)
  • tahini - 2 Tbsp. (30 g)
  • garlic - 2 cloves
  • beets (steamed & peeled) - 5 whole w/juice
  • chickpeas (drained) - 15 oz can (425 g)
  • lemon juice - 1/4 lemon
  • salt - 1 tsp. (6 g)

Instructions:

BLEND

  1. Add all ingredients to Vitamix container (include the beet juice for color)
  2. Ramp from variable speed 1 to 10.
  3. Blend on high for 2 minutes until smooth
  4. Drizzle with olive oil, sprinkle with cumin and pepper
  5. Snap a pic and tag #lifeisNOYOKE
  6. Enjoy!

Useful tips for Beet Hummus

Any blender should be able to handle making hummus. But with our Vitamix, I don’t have to spend the extra time taking the shell off each chickpea. I still get an amazingly smooth texture without the effort.
