Guiltless fruit-based smoothie that tastes like a homemade pie.

Ingredients:

  • almond milk (unsweetened) - 1 cup (240 mL)
  • rhubarb (raw) - 1 cup (100 g)
  • blueberries (frozen) - 1 cup (155 g)
  • dates (pitted) - 2 whole
  • rolled oats - 1/4 cup (20 g)
  • vanilla - 1 tsp. (5 g)
  • ice - 1 cup (217 g)

Instructions:

BLEND

  1. Add all ingredients into Vitamix container
  2. Blend on high for 60-90 seconds (or use “Smoothie” preset)
  3. Snap a pic and tag #lifeisNOYOKE
  4. Enjoy!

Useful tips for Blubarb Smoothie

My only experience with rhubarb was after it was cooked. I had to Google if it was okay to eat raw. It is (and man, does that cut down on prep time)!

If you're out of blueberries, my guess is that frozen strawberries or raspberries would be just as good (maybe even better).
