Hearty, corn chowder soup made in the Vitamix!

Corn, Potatoes,

Ingredients:

  • extra viergin olive oil - 1 T
  • yellow onion - 1 small (120g), peeled, chopped
  • russet potatoes - 2 medium (520g), cut into large chunks
  • vegetable stock - 2 cups (480 ml)
  • corn kernals - 4 cups
  • milk of choice - 1/2 cup (120 ml)
  • salt - 1 t
  • pepper - 1 t

Instructions:

PREP

  1. Cut potatoes into large chunks
  2. Chop onion

COOK

  1. Add olive oil to saucepan over medium heat
  2. Sauté onion for five minutes or until soft
  3. Add potatoes, vegetable stock, and 1 cup of corn
  4. Cover and simmer for about 15 minutes (until potatoes are soft)

BLEND

  1. Add heated mixture to container
  2. Put the top on
  3. Start on lowest speed then ramp up to variable speed 7 and blend for 10 seconds. (For silky smooth soup as pictured in original Vitamix recipe, blend on variable speed 10).
  4. Return to saucepan over low heat
  5. Stir in remaining corn and season with salt and pepper
  6. Enjoy

Useful tips for Corn Chowder

Recipe calls for olive oil for sautéing the onions. But if you’re whole food plant based, just use water.

You're in control of the texture for this soup. The image from the original recipe shows a silky smooth texture. To get that, blend on the highest speed your blender will go.

But we wanted a bit more texture, so we blended on variable speed 7, giving it a less silky look and feel. Up to you!
