Fresh and filling low calorie slaw.

Ingredients:

  • SALAD
  • red cabbage - 1/2 head chopped
  • green onion - 4 sprigs chopped
  • red pepper - 1 whole diced
  • snap peas - 1 cup diced
  • edamame - 1 cup deshelled
  • carrots - 1 cup shredded
  • cucumbers - 1/2 whole diced
  • DRESSING
  • rice wine vinegar - 2 Tbsp
  • soy sauce - 2 Tbsp
  • sesame oil - 1 tsp
  • fish sauce - 1 tsp
  • TOPPING
  • sesame seeds - 2 Tbsp
  • avocado - 1 whole slivered
  • sriracha - 4 dollops

Instructions:

SALAD

  1. Chop all of the ingredients
  2. Add to bowl

DRESSING

  1. Mix all ingredients with a spoon
  2. Pour dressing on salad

TOPPING

  1. Fan avocado on top
  2. Sprinkle sesame seeds
  3. Add a dollop of Sriracha
  4. Snap a pic and tag #lifeisnoyoke
  5. Enjoy!

Useful tips for Crunchy Asian slaw salad

There is no science to this recipe.  Whatever veggies you have on-hand that sound like they would fit the profile will work.

Have a sweet tooth?  Throw in some chopped mango.

If you want to ease yourself into a purely cabbage salad, put this slaw over a bed of romaine. Easier for some to digest.

Most salads get soggy if you pre-dress them, this one does not.  It’s a perfect dish to pack for lunch because you’ll never get the dreaded limp lettuce.  Cabbage is strong and hearty and really really good for you!
