Blueberry Oatmeal Pancakes

Perfectly fluffy, delicious, vegan Vitamix pancakes

Aquafaba, Banana, Dates, Oats,

Ingredients:

  • rolled oats - 1 1/2 cups (135 g)
  • banana - 1 whole
  • nut milk of choice - 1 cup (240 mL)
  • aquafaba - 1/4 cup (60 mL)
  • baking powder - 3/4 tsp. (6 g)
  • cinnamon - 1/2 teaspoon (1.3 g)
  • vanilla extract - 2 teaspoons
  • dates, pitted - 2
  • blueberries - 1/4 cup (37 g)

Instructions:

1-Heat and lightly grease a large pan or skillet to medium/low heat.
2-Add ingredients in order listed to Vitamix container except for blueberries. 3-Blend on high speed for 30 seconds.
4-Add 1/4 cup of pancake batter to pan.
5-Spread batter out in circular motion.
6-Add blueberries onto cooking pancakes
7-Gently flip after a couple minutes (when bottom-side is browned or when you see bubbles). 8-Cook another couple minutes until cooked through.
9-Repeat steps 4-8.
10-Serve with real maple syrup.

Useful tips for Blueberry Oatmeal Pancakes

Aquafaba, also known as chickpea water, is what we used in place of egg whites (an ingredient in the original). Our vegan french toast uses it similarly.

Where do you get aquafaba? Just make hummus (beet or roasted red pepper or edamame or sun-dried tomato basil or black olive)! And then save the water that comes in the chickpea can.

You can add some flaxseed for a little extra fiber and healthy fats.

If you’re low on oats, you can sub out for granola.

The recipe assumes you’re using store-bought almond milk. If you’re using homemade, dilute with a bit of water.

Top it how you like! Pictured is strawberry compote (frozen or fresh strawberries heated in a saucepan)and coconut flakes. Peanut butter or blueberries are also great on these pancakes.
