Ingredients:
- carrots - 3 large
- celery - 8 ribs
- red bell pepper - 1 whole (seeded)
- onion - 1 whole
- salt - 1 tsp
- black pepper - 1 crack
- thyme - 2 tsp
- bay leaves - 2
- worchestire sauce (vegan) - 2 tsp
- red wine - 2 Tbsp
- diced tomatoes - 12-14oz can
- plant-based beef (frozen) - 9oz (255g) bag
- vegetable broth - 2 quarts
- pearled barley - 2/3 cup
- parsley (fresh) - handful
