This gorgeous, delicious dressing made with blueberries is a must try

This dressing is absolutely stunning. Put this on a plate at your next dinner party and you are sure to impress.

Blueberries, balsamic, and dijon come together quickly and easily using a Vitamix (or any blender, really).

It’s healthy, it’s free from additives, it’s bright (in color and in taste), and your guests will ooo and ahh. What could be better?

Homemade dressing is always the star

We host our fair share of dinner parties. Without fail, our homemade dressings are the most requested recipes.

Part of me wants to say, but didn’t you try my veggie tort? Inevitably I end up writing 4-5 ingredients on a Post-It note and getting this response: “that’s it?”

Yes, that’s it. The most delicious thing you ate at my house was the easiest to make.

I guess that means nothing is stopping you from being the host/ess with the most/ess. Just make sure you’ve got a fancy salad and some homemade dressing!

A beautiful and bright dressing for all of your summer salads

Balsamic Vinegar, Blueberries, Dijon Mustard, Maple Syrup, Olive oil,

Ingredients:

  • balsamic vinegar - 1/4 cup (60 mL)
  • olive oil - 1/2 cup (118 mL)
  • dijon mustard - 1/4 cup* (62 g)
  • maple syrup - 1 Tbsp. (15 mL)
  • blueberries (fresh or frozen) - 1 cup (150 g)
  • pepper - a couple of cracks

Instructions:

  1. Put all ingredients into Vitamix container
  2. Blend on high for 60 seconds
  3. Pour on your favorite salad
  4. Snap a pic and tag #lifeisNOYOKE
  5. Enjoy!

Useful tips for Bright Blueberry Balsamic Vinaigrette

You can serve this dressing on pretty much any salad. We chose to dress spinach, quinoa, beets, slivered almonds, and dried blueberries. It was divine (and very very pretty).

Note: This is a pretty dijon-heavy recipe. If you’re not a huge fan, use half the amount.

Want a really bright color? Use white balsamic vinegar instead of the traditional black. Same flavor, less sullying of the blueness.

    I’m whole food plant based – so SOS – no salt, oil or sugar added to food. Love the sound of your recipes, but can’t have any oil in my meal plan. Can you maybe suggest an alternative to it. Or what would happen if it were eliminated?

      Skip it and replace with water. Should do the trick.
