This dessert is rich, decadent, and dairy-free. It’s the perfect option for serving guests with dietary restrictions.

Just a few ingredients come together quickly in your Vitamix to create a dinner-party-worthy dessert.

Make some tonight, you’ll be licking the bowl. šŸ™‚

Aquafaba, the magic ingredient for vegan baking

Aquafaba is a little strange. I’m still getting used to using it as a substitute. But it’s never failed me.

And, man, is it magical!

In case it’s your first time hearing about this ingredient, it’s the water leftover in a can of chickpeas. Stay with me here…

It’s got an awesome egg-white-like consistency while still maintaining it’s veganess. We’ve used it to make ourĀ French ToastĀ that’s in our monthly brunch rotation.

Almost every time I see aquafaba mentionedĀ it’s to tout its ability to make mousse. So I made some.

It was good.

Really good.

I shouldn’t be surprised that it worked, but I’m still impressed.

It’s incredibly decadent and rich. In fact, we are changing our suggested serving (from what is pictured) to shot glasses. A couple of spoonfuls is the perfect amount.

Grab a few shot glasses and fill em up with mousse. Then top em with homemade dairy-free whip!

A decadent dessert that's guiltless

Aquafaba, Dark Chocolate, Maple Syrup, Vanilla,

Ingredients:

  • MOUSSE
  • dark chocolate - 1 cup
  • aquafaba - 1 cup (before whipping)
  • vanilla - 1 tsp.
  • maple syrup - 1 tsp.
  • WHIPPED TOPPING
  • coconut cream - 1 can
  • powdered sugar - 2 Tbsp.

Instructions:

PREP

  1. Put coconut cream in freezer for 30 minutes

CHOCOLATE

  1. Chop chocolate into 1 inch pieces
  2. Put into microwave safe bowl to melt
  3. Microwave in 30 sec intervals, stir between (or use double boiler)
  4. Work slowly, you don’t want to burn your chocolate

MOUSSE

  1. Drain the chickpea water (aquafaba) into your Vitamix
  2. Blend on high for 3 minutes
  3. Add the vanilla and maple syrup
  4. Blend on high for 2 more minutes

PATIENCE

  1. Let your chocolate cool, don’t skip this step
  2. Put your whipped aquafaba in the fridge while you wait
  3. When your chocolate is cool, but still liquid, it’s ready
  4. Take your aquafaba out of the fridge
  5. Blend on high again for 1 minute

STIR

  1. Fold the aquafaba into the chocolate mixture (don’t blend)
  2. Pour into shot glasses
  3. Cool for at least 30 minutes

WHIPPED TOPPING

  1. Add the can of coconut cream and powdered sugar to your Vitamix
  2. Blend on high for 30 seconds

PRESENT

  1. Top chocolate shots with whipped topping
  2. Snap a pic and tag #lifeisNOYOKE
  3. Enjoy!

Useful tips for Aquafaba Chocolate Mousse

You want to work slowly and deliberately here. This recipe takes a little patience.

When you melt your chocolate, work in 30 second increments. Heat for 30 seconds, stir, heat again, repeat. You want a liquidy consistency.

You can always use a double boiler to melt your chocolate as well.

Obviously set the chickpeas aside instead of wasting them. Even better, make our Edamame Hummus or our Beet Hummus.

Some of the aquafaba will froth. Not all of it.

And that’s okay. It will still set very nicely.

After the initial blend, it will feel warm. Refrigerate it before it’s final blend to cool it down a bit.

Wait until your chocolate is cool. If you mix it with the aquafaba while hot it won’t set properly.

You want to fold (not stir) your chocolate and aquafaba mixture. You’re trying to keep the air bubbles intact. Do not attempt to blend the chocolate using your Vitamix. It sadly won’t work. šŸ™

This is a VERY rich dessert, so we feel like shot glasses are the perfect portion. Plus they are cute!

If at all possible, make this recipe the evening you plan to serve it. Both the mousse and the whipped topping solidify a bit too much after 24 hours in the fridge.

This recipe looks much harder than it actually is to make. Give it a try, you’ll love it!

    HI shalve!
    love all youers videos!! and recipes
    did you use the aer disk to make aquafaba to whipped making this mouss or generally?
    I am form isrel and watched you threw the years and learned so much using my vitamix ascent A3500i better
    so now in my country vitamix lunched the aer disc and i hesitate if purchasing it or no
    thnak you happy Passover:

      Hi Liraz, thank you for following along! The aer disc is great for making whipped cream and cocktails but if you aren’t planning on making those then your regular container should be just fine.

    This was so easy to make and really rich and delicious. At first I was worried the Aquafaba was not going to work. It was bubbly and hot after first blend and then I put it in fridge to cool. I re-blended it after cooled and folded in the chocolate and it was a thick mousse. Really good! Thank you for sharing it.

    Before finding your website, I tried my Vitamix using aquafaba liquid and all I got was a hot liquid with frothy bubbles. Other recipes said use a hand blender or a stand mixer but I had tried my Vitamix. So I thought that the Vitamix was not the proper tool perhaps.

    Then….I googled to see if I could find any answers and saw your website and this recipe which looks yummy. So I gave it five stars because it looks so good but haven’t actually tried it.

    I need more advice about how to make the aquafaba turn out better in a Vitamix. Some people are actually making meringue cookies so I think it must be more than frothy bubbles that they get.

    I love making whipped cream with my Vitamix. So fast! I thought it would be the same but it isn’t.

    What am I doing wrong?

      Sadly I’ve had a very similar experience trying to froth aquafaba in our Vitamix. Warm bubbles is pretty much the extent of it. I’m going to try it in the new Aer Disc Container and see if I get a better outcome. Will update this comment with results šŸ™‚
