Here are some chewy, vegan, gingery cookies for your Vitamix!

If you like ginger, these are the cookies for you.

They’re chewy, a little bit spicy, and a lot a bit chocolatey.

We make the batter in our Vitamix to keep things simple.

Add this recipe to your cookie repertoire, you’re dairy-free friends/family will be extra thankful for you this holiday season.

Another family recipe veganized

My Aunts in Seattle perfected this cookie recipe many years ago.

Now, I’m not a huge ginger fan. But these cookies always hit the spot.

When my family started to eat a little healthier, we tried bringing these along with us.

Over the years we’ve reduced the sugar, subbed in whole wheat flour, and used fresher ingredients.

But now we have vegans. And vegans are hard to bake for.

I used some of my new tricks to substitute the eggs and the butter.

And you know what?

They are still:

  • Delicious
  • Chewy.
  • Gingery.
  • Chocolatey.

My family still loves them too (which is obviously what’s most important).

I made the batter in the new Vitamix Explorian E310. It has a 48 oz container which was perfect for blending one batch of cookies (without dirtying up a ton of dishes).

First I added the wet ingredients and blended, then the dry and blended again.

I hand mixed in the ginger and chocolate because I wanted chunks of them in the final product.

I was a little skeptical (as I always am when I’m experimenting with baked goods), but they turned out perfectly.

Melty and chewy with little chunks of all the good stuff.

So update those family recipe books. These ginger cookies are a keeper. 🙂

Cookies chock full of gingery goodness (with bonus chocolate).

Applesauce, Chocolate Chips, Coconut Oil, Ginger,

Ingredients:

  • dark brown sugar - 1 cup
  • dark molasses - 1/4 cup
  • applesauce (or aquafaba) - 1/4 cup (3 Tbsp.)
  • coconut oil - 1/3 cup
  • flour - 1 1/4 cup
  • whole wheat flour - 1 cup
  • ground ginger - 1 1/2 tsp.
  • baking soda - 1 tsp.
  • salt - 1/2 tsp.
  • fresh ginger (peeled & grated) - 2 Tbsp.
  • candied ginger (chopped) - 2/3 cup
  • dark chocolate chips - 1 cup

Instructions:

PREP

  1. Preheat oven to 350 degrees
  2. Put a silpat mat or parchment paper on a cookie sheet

BLEND

  1. Add the first four ingredients into your Vitamix container
  2. Blend on high for 60-90 seconds
  3. Use tamper to push ingredients into the blade
  4. Add the dry ingredients
  5. Blend on high for another 60-90 seconds
  6. Use tamper to push ingredients into the blade
  7. Stop blending when you have a uniform dough
    1. The dough is pretty thick

BAKE

  1. Turn off or unplug your Vitamix
  2. Pour in the last three ingredients
  3. Stir by hand with a spoon
  4. Scoop by the Tablespoon onto cookie sheet
  5. Bake for 8-10 min (do not overcook)
  6. Let cool for a few minutes
  7. Serve with hot tea or a glass of almond milk

    Have you tried making these with a gluten free flour? Any idea what might work best?

      We have not, but have found that Bob’s Redmill brand of gluten free flour is usually a good substitute with no other modifications.

      I wouldn’t use more oil for fear that they would get too oily. But you could sub a mashed banana for the applesauce… should work just as well.

      Great question, Laura. You can sub for any other oil (if they have lower levels of cholesterol) or you can sub in more applesauce in place of the coconut oil.
