This Hazelnut Spread from the Vitamix 100th Anniversary Cookbook Tastes Just like Nutella
We just got our hands on the Vitamix 100th Anniversary Cookbook. And this recipe for Hazelnut Spread is the one we were the most excited to make.
Super easy and so, so good.
And even though it’s 100% plant-based, so dairy-free, it tastes just like Nutella. Better, actually.

Vitamix Nutella
This Hazelnut Spread from the Vitamix 100th Anniversary Cookbook Tastes Just like Nutella
Ingredients:
- whole roasted unsalted hazelnuts - 2 cups (300 g)
- whole roasted unsalted cashews - 1/2 cup (75 g)
- unsweetened cocoa powder - 2 Tablespoon
- dates, pitted (or powdered sugar) - 4, pitted (or 1/4 cup (25 g))
- bittersweet dark chocolate chips - 3 Tablespoons (25 g)
- coconut oil (optional) - 3 Tablespoons (45 ml)
- sea salt (optional) - 1/4 teaspoon
Instructions:
Add ingredients into container in order listed. Put the top on and blend on the highest speed your Vitamix can go. Use the tamper for the first minute or so to gently push the ingredients down into the blade. It’s done after about two minutes or when smooth.
Useful tips for Vitamix Nutella
This recipe was made for a Vitamix, but should work in a food processor.

Hi there, I made this in my brand new Vitamix with the 64oz container and it DID NOT blend enough to be smoothe. I followed the ingredients – though I used 3 tbsps of coconut cream instead of coconut oil, to help make it creamier as there is a lot of oil in the hazelnuts and cashews.
Sadly, it’s an expensive little nut butter to waste – as it did not get creamy at all. It has the texture of undercooked Brownies.
Also, my blender was smoking! That doesn’t sounds safe to me but I’m new to the Vitamix.
I saw someone above said the minimum for nut butters in the 64oz is 4 cups and this called for 2.5cups, so I wonder if that was the difference….
Should add another 1.5 cups of and blend it up?

This reicipe is amazing. I tried while on vacay in another type of high speed blender and it did not work. In vitamix, it’s easy peasy and so worth it and i previously disliked hazelnuts but no longer (with chocolate lol)
So sorry, I must’ve used a different recipe the first time I made this, because after making it following this recipe, mine was very thick and not creamy…kind of dry. I used date syrup but it wasn’t sweet at all so I added some moist brown sugar and even some more (about 1 teaspoon) of coconut oil to no avail. I also blended it much longer than 2 minutes.

I HAVE THIS VITAMIX COOKBOOT WANT TO MAKE THIS RECIPE.I WATCHED THE VIDEO .BUT I HESITANT BECOUSE I KNOW WHEN MAKING NUT BUTTER IN THE VITAMIX 64 CONTAINER THE RECOMMENDED AMOUT OF NUTS IS 4 CUPS SO IT WILL BLEND GOOD THREW THE BLADES.
IN THIS RECIPE THER IS ONLY 2 1/2 CUPS

Thank you for all your recipes and tips. I got my Vitamix 750 in October and use it every day. I have already made many of your recipes. I am considering this nutella spread as Christmas gifts. What do you advise for timing? Once made–and stored in the fridge–when should it be eaten? Could I make some now and freeze it, then gift it closer to Christmas? Thank you very much. Michele
Hi there, this “Nutella” spread should be good for at least a week in the fridge. Freezing it should stop the clock if you want to make it in advance 👍
