This trick goes back to my days as a busboy at the deli in Minneapolis. While my main job was to clear tables, I was often asked to help with sidework. Read: Slice citrus fruits.
The goal was simple:
- Cut the safest way possible.
- Get the most out of each lemon, lime, and orange.
- Get uniform slices that did their job (sit on water glass rims, fit inside beers, be beautiful beside pancakes).
I’ve taught countless people this simple, safe and efficient method for slicing citrus fruits for years. (Often at house parties, but still.)
