This Caesar dressing needs an analogy.

You know how Olympic gymnasts start with a score based on the difficulty of their routine? The tougher the task, the higher the starting score?

And assuming they execute, they’ll score higher than the field?

Okay.

This Caesar is the Simone Biles of salad dressings.

A Caesar dressing that’s dairy-free and vegan, but tastes (performs) better than the rest.

That’s this perfect Caesar dressing. The greatest in the world.

And all it took was for someone to ask for it.

Can you make a vegan Caesar without avocado?

It was a simple request.

Can you figure out a vegan Caesar dressing? Something without avocado?

Yes. Challenge accepted.

Often vegan versions of recipes are nothing compared to “the real thing.” They’re only better than nothing.

This Caesar dressing is not one of those. It’s better than the real thing.

Perfect Caesar dressing that nobody would ever know is vegan.

Apple Cider Vinegar, Cashews, Dijon Mustard, Garlic, Lemon, Soy Sauce,

Ingredients:

  • cashews - 1 cup, raw
  • water - 1/2 cup
  • oil of choice (skip if WFPB) - 4 Tbsp
  • lemon - 1/4 of a whole, peeled
  • dijon mustard - 1 Tbsp
  • garlic cloves - 2, peeled
  • soy sauce - 1 tsp
  • apple cider vinegar - 1 tsp
  • capers - 2 tsp
  • salt & pepper - 1/2 tsp, each, (more or less to taste)

Instructions:

TOOLS:

We used our Vitamix Pro 750, but any blender or food processor should work fine.

PREP:

If you don’t have a high-powered blender, soak your cashews overnight.

BLEND:

  1. Add ingredients.
  2. Process on high speed for 30 seconds.
  3. Add to fresh romaine lettuce.
  4. Enjoy!

    If you want to make it oil-free, aquafaba (liquid from chickpeas) is a good substitute.

    I used 4 small cloves of garlic as my heads seem smaller this time of year. Also subbed EVOO for grape seed oil, 2 limes for lemons as that is usually what I have on hand and Braggs Amino Acid for soy, earthier flavor. Used 1/4C water vs 1/2 and added a healthy TB of nutritional yeast.

    Fantastic keeper of a dressing that will be in rotation, delicious!

    This is better than any Caesar dressing I’ve ever had. I used avocado oil and followed the recipe exactly – it’s a keeper, definitely makes a salad comfort food. Thank you!

    Another winner! Just added a bit more ACV and some juice from the capers and WOW! Tastes even better the next day. Going to divide half and try it with horseradish for a sandwich spread.

    Tastes nothing like Caesar. Very bland. Tastes like cashew cream. Had to add more lemon (2+ lemons, juiced) more garlic, more pepper, more ACV, more capers. Even added two anchovy filets. Still not happy with it.

      Capital T is Tablespoon
      small t is for teaspoon
      An easy way to remember them is Capital T is larger therefore represents the larger of the two measurements and

    Here’s another wrench to throw into the substitution mix. We are plant based whole food, which means no oil, added salt or sugar (no sos). So can this be made without the oil? The salt is no problem to omit. I can almost taste it and want to make it.

    Does it have to be grape seed oil? I have avacado, safflower, olive and canola. Think any of those would be a good substitute?

      Will last up to two weeks in the fridge. The darker the container, the better.
