Here's a delicious alternative to plain ol' hummus
Hummus is good on everything. And as a recipient to things that dip.
But sometimes you need some variety. And color.
Fire up your Vitamix and make this delicious beet hummus.
Before we jump into the recipe, here’s how this beet hummus came to be.
Not on my grocery list
There are a few things on our grocery list that I don’t even write down anymore.
Why don’t I write them? Because they come home with me every time.
One of those things is Trader Joe’s Beet Hummus. It’s our favorite.
But there was one problem.
The closest TJ’s is 2,500 miles away
We’re spending the winter in Hawaii. (Pretty much everything about that is amazing.)
Except that the closest Trader Joe’sĀ is a 2,500-mile swim.
No jar of cookie butter is worth that amount of effort.
But that earthy, savory tasting beet hummus? We had to try and makeĀ Ā the swimĀ our own.
The creation process
I tried to make a batch of this beet hummusĀ a couple of weeks back. But the color was off.
And it just tasted like pink hummus. (Think pink lemonade. It tastes like lemonade, but it’s pink.)
And I’m not about to share a recipe for basic pink hummus with you all. It has to be good.
So I tinkered around and although it’s not quite as good as TJ’s, it’s pretty awesome.
If you’re having people over, make some. The color is super impressive and no one needs to know how easy it was to make. Total crowd-pleaser.
Go make this super easy, and very visually impressive dip (or spread)!

Useful tips for Beet Hummus
Any blender should be able to handle making hummus. But with our Vitamix, I don’t have to spend the extra time taking the shell off each chickpea. I still get an amazingly smooth texture without the effort.

Iād like to make this, as it sounds delicious. Can you give the weight needed for beets, instead of just 5. Also a measurement of cooking liquid. Beets vary so much in size. Thanks

When we wrote this recipe we didn’t even know you could steam your own beets! This is written specifically for packaged pre-steamed beets that are packaged in their own liquid (they are usually golf ball sized). If you’re using your own roasted beets I would think one tennis ball sized one would be comparable and just add all of the juice that collects while cooking. Luckily this recipe does not need to be perfectly measured, just measure with your heart š
