A flavorful dip for your Vitamix (aka best hummus ever)

Most everyone has tried hummus at this point, but you haven’t tried one as flavorful as this.

We took the Thai flavor profile of curry, coconut, sweet and spicy to re-create one of our favorite hummus flavors.

It’s really easy to make in your Vitamix and, is a perfect contribution to any potluck.

Start chopping some veggies so you have a vehicle for this delicious dip!

How to mix up your hummus game

Lenny’s sister, Alana, introduced us to this flavor of hummus by Hope Hummus.

She said “Lenny, don’t you love stuff like this?” and a giant smile emerged on his face.

He loves hummus. And he loves Thai food.

But hummus that tastes like Thai food? His sister knows him so well.

Now it’s his favorite. I barely get a spoonful before it’s gone. (Story of my life, by the way.)

Only problem is, neither of the grocery stores near us carry the stuff.

And although I’m occasionally willing to make a special trip, it’s actually easier to just make my husband a batch.

I’ve got a our Vitamix, I’m a hummus connoisseur, so game on.

Turns out I was right. It was really easy to recreate that coconutty, curry flavor with a little sweetness and a little kick.

The first try was pretty good, but Lenny’s grin wasn’t quite as big as I wanted it to be. So I tweaked the recipe a bit and there was that smile. 🙂

It’s absolutely mouth-watering.

And because it’s so easy, so flavorful, and so unique, we think you should bring it to your next potluck.

Thai Curry Hummus

Thai Curry Hummus

  • Yield: 12 oz.
  • You're needed for: 5 minutes
  • Until it's done: 6 minutes

A flavorful and unique dip/spread to share.

Ingredients:

  • chickpeas (drained) - 2.5 cups (500 g)
  • coconut milk - 1/4 cup (60 mL)
  • olive oil - 2 Tbsp (30 mL)
  • tahini - 1 Tbsp (15 g)
  • jalapeno (deseeded) - thumb sized piece
  • lime (peeled) - 1/4 whole
  • date (pitted) - 1 whole
  • garlic - 2 small cloves
  • curry powder - 1.5 tsp. (4 g)
  • salt - 1/2 tsp. (1.3 g)

Instructions:

  1. Add all ingredients into the Vitamix container
  2. Ramp from variable speed 1 to 10
  3. Blend on high for 60-90 seconds until smooth (use tamper if necessary)
  4. Pour into bowl
  5. Serve with veggies, chips, pita or on a sandwich
  6. Snap a pic and tag #lifeisNOYOKE
  7. Enjoy!

Useful tips for Thai Curry Hummus

This is a smooth hummus. If you like yours thicker, add more chickpeas.

The jalapeno gives it a little kick, but it’s certainly not “spicy”. If you want it spicier, add more jalapeno.

If you’re watching calories, you can use light coconut milk. You can also sub out the olive oil for aquafaba (the chickpea water) or more coconut milk.

We used the 48 oz container for the Vitamix Ascent Series. If you’re using the 64 oz container, you may want to double your batch.

    Did you mean 1/4 cup of lime juice? Or 1/4 parts of a lime? Thanks in advance!
