What would you order at a deli? Vegan tuna?

Vegan tuna salad made in a Vitamix served over greens.

Shalva asked me this question recently.

My delayed response?

“Want to make vegan tuna with chickpeas in our Vitamix?”

I guess I'm done with tuna?

“Mom, we made tuna with chickpeas this week. It was really good!”

And silence.

I knew what she was thinking. Oh, great, yet another thing I cannot feed you.

Yeah…

I get it. Being too good for tuna is quite annoying.

And telling people you shouldn’t eat tuna is even worse.

And making people feel like they need to make this for you is so not cool.

And I know my dad eats tuna every day for lunch. High in protein, easy, quick.

So this “tuna”?

It’s not for you, Mom, Dad.

This vegan tuna made with chickpeas is for super progressive meshugenahs like me.

Yeah, this tuna is dang tasty.

Yeah, it doesn’t taste fishy. Yeah, it’s satisfying to make and quite easy.

But Mom, Dad, don’t make this. You, too, Nana and Papa.

Not for yourself, not for me. Enjoy your tuna.

  • Yield: 4 small servings
  • You're needed for: 10 minutes
  • Until it's done: 10 minutes

Easy, healthy and quick vegan tuna salad. Deliciously not fishy.

Celery, Chickpeas, Dijon Mustard,

Ingredients:

  • raw onion - 1/8 of a whole
  • dill pickle - 1 whole
  • celery - 1 stalk
  • chickpeas - 15 oz can (425 g)
  • dijon mustard - 1 Tbsp. (18 g)
  • vegan mayo (we use Just Mayo) - 2 Tbsp. (30 g)
  • salt - to taste
  • pepper - to taste

Instructions:

CHOP VEGGIES (via dry chop technique)

  1. Place onion, pickle, and celery in your container.
  2. Blend on Variable Speed 1 for 10 seconds (or until correct size).
  3. Set chopped veggies aside.

MAKE TUNA (via wet chop technique)

  1. Add can of chickpeas (liquid, too) to your container.
  2. Blend on Variable Speed 1 for 10 seconds (or until correct size).
  3. Drain liquid (just like you would with a tuna can).

MIX

  1. Get a bowl.
  2. Combine veggies, “tuna” (chickpeas), and rest of ingredients.
  3. Gently mix.
  4. Snap a pic and tag #lifeisNOYOKE
  5. Enjoy!

    Very tasty. Instead of the vegan mayo, I used 2 Tbsp of the “No yoke” recipe Caesar dressing. Really good on toasted bread with a slice of tomato.

    I like this recipe, my husband does too, that says a lot. He’s not vegan, just me. But he doesn’t eat meat in the house. So I try and find things that he likes.
    I did add a sheet of Nori, broken up and blended first. I liked the seawater touch it gives.
