Coming to terms with the secret to perfect balsamic vinaigrette
I discovered the magical salad dressing, balsamic vinaigrette, at a restaurant years ago.
This is so good!
So I tried to buy a bottle at the grocery store.
- Did I get the wrong brand?
- Did I get the wrong type?
- Was I dreaming about being served a magical dressing called balsamic vinaigrette?
Nope.
You gotta make it by hand.
Get the ingredients and emulsify them.
Huh? Why?
I’ll make it at home and mix it with a fork. Vigorously, if I must.
You can’t possibly need a Vitamix to make restaurant quality, creamy balsamic vinaigrette, can you? I can’t tell my want-to-be-healthy readers there’s a $400 barrier to this dressing, can I?
You could probably emulsify a balsamic vinaigrette with a hand mixer or some other blender, sure. We should probably do a side-by-side, double-blind taste test.
But until we do, I’m gonna say it. The easiest way to make the best creamiest, most delicious, restaurant-quality balsamic salad dressing is with a Vitamix.
(Pictured above is a Vitamix A3500 (review) with an 8-ounce container. You can make this dressing in pretty much any container, but this setup will let you make the smallest possible batch. Which is ideal when it’s just you and your wife for lunch).

Balsamic Vinaigrette
The best balsamic vinaigrette known to man.
Balsamic Vinegar, Dijon Mustard, Maple Syrup,Ingredients:
- extra virgin olive oil - 2 parts
- balsamic vinegar - 2 parts
- dijon mustard - 1 part
- salt and pepper - to taste
- UPGRADE OPTION
- maple syrup - 1 part
Instructions:
- Add ingredients into Vitamix container.
- Ramp from variable speed 1 to 10.
- Blend on high for 30 seconds to emulsify.
- Pour on your favorite salad.
- Snap a pic and tag #lifeisNOYOKE
- Enjoy!

Thanks for this recipe! It is a new family favorite. I love how it stays emulsified even after days in the fridge. The first time I whipped this up, I substituted regular yellow mustard for the dijon, and it leaned more toward a honey mustard flavor. Everyone loved that as well! This time I’m back for more, but with a jar of dijon on hand.

Wow…! First time using the Vitamix to make dressing, and I’m so happy with the outcome. The finished dressing is so creamy. Also, I was worried about the amount of mustard & maple…most recipes, these ingredients are like 1/2 or even 1/4 part, but the dressing is delicious (I made just as instructed).

I’m curious what a “part” is?
I guessed maybe a 1/4 cup, but I wouldn’t have equal parts of maple syrup as vinegar and oil. Any traditional measurements for the recipe? Thanks!

I’ve not tried the recipe. My question is about the mini blending jar you used. What is the set up? Is it an accessory purchased or something you put together? Slick. I have a different style vita mix i think it’s the 5200.
