Try this Black Forest Ice Cream: Chocolate, cherries, and cream in plant-based and frozen form
Black Forest is a classic cake flavor highlighting chocolate, cherries, and cream.
This is our take on it in frozen dessert, plant-based, Vitamix recipe form.
It’s beautiful, it’s tasty, and it’ll make you far less guilty than eating a whole slice of cake.

What do you wanna call this one?
Lenny: “I got some great pictures. What should we call this?”
Shalva: “Black Forest Ice Cream”
L: “Hahaha, what? Are you saying that ironically?”
S: “Have you never heard of black forest cake???”
L: “Guess not…”
You could say that one of us is a baked goods connoisseur while the other is, well, clueless. Lenny is a pretty good sport when I drag him to bakeries, but cake is cake is cake to him.
Me, on the other hand, I can tell the difference between dark chocolate and devil’s food.
So when I was thinking what kind of ice cream flavor I wanted to make, plain chocolate wasn’t going to do the trick.
I wanted something special. Something with fresh summer fruit (but still chocolatey because that really is the only flavor Lenny gets excited about).
I was led in the direction of the black forest flavor profile and veganized from there.
This ice cream is rich, decadent, textured, and (although still a treat) is much better for you than traditional ice cream (or cake!).

Recipe
Black Forest Ice Cream
A classic flavor recreated as a plant-based nice cream.
Bananas, Cherries, Cocoa Powder, Coconut Cream, Coconut Milk, Dark Chocolate, Maple Syrup,Ingredients:
- coconut milk (frozen in cubes) - 1 cup (240 mL)
- dark chocolate - 2 oz.
- cherries (pitted) - 12 whole
- coconut cream - 1 cup (240 mL)
- bananas (peeled & frozen) - 2 whole
- maple syrup - 2 Tbsp. (30 mL)
- ice - 2 cups (434 g)
- cocoa powder - 2 Tbsp. (10 g)
Instructions:
PREP
- Freeze coconut milk into ice cube trays overnight
- Next day: melt chocolate and let cool
- Over a double boiler
- Or microwaving in 30 sec increments
- Wash and pit 12 cherries
BLEND #1
- Add coconut cream, coconut milk cubes, bananas, maple and 1 cup ice to container
- Blend on high pushing ingredients into blade from corners with the tamper
- Pour half of the mixture into a pan
BLEND #2
- Add the dark chocolate, cocoa powder, and another cup of ice (217 g) to the remaining mixture
- Blend on high pushing ingredients into blade from corners with the tamper
- Pour into same pan and swirl mixtures together (leave 2 distinct colors)
CHERRIES
- Smash cherries
- Use an 8 oz container and pulse 5-10 times
- Use a fork to mash
- Add to the 2 colored pan and swirl into mixture
- Freeze for 30-60 minutes (do not over-freeze)
- If not serving at that time, pre-portion servings and store in freezer
- Take out to thaw 5-10 min before serving
- Enjoy!
Useful tips for Black Forest Ice Cream
Get the cherries into bite-sized pieces, you don't want jam.
Swirl them together so you can see the brown, white, and red seperately.

You can try to do 1/2 cup of nut milk and then add another frozen banana.
