Ridiculously good and incredibly easy to make Caramel for your Vitamix!
Listen. This dairy-free caramel is delicious.
It’s easy and you don’t have to use the stove.
I’m not sure what else you could possibly want/need.
Make yourself some of this caramel. You deserve it.
Do you even know what caramel is?
Lenny: “Do you think you could make us some vegan caramel in our Vitamix?”
Shalva: “Do you even know what caramel is?”
As far as I knew, caramel was sugar, butter, and heavy cream cooked on a pot over heat until “caramelized”.
So no, I can’t make a dairy-free version in a damn blender.
Or can I???
No, no I can’t.
But I can make something that tastes pretty darn close. And that’s good enough for me!
(And it was more than good enough for Lenny.)
Lenny: “You have to put the words ridiculously good in the title somewhere. It’s the only way to describe it!”
Instead of using sugar, I used nature’s sweetener, pitted dates. And instead of butter and cream, I used coconut oil and coconut milk (the kind that comes in a can).
Normally we preach that any blender will make most of our recipes. But when it comes to liquifying dates, you kind of have to use a Vitamix.
We used the new Explorian E310 (review) that comes with a 48 oz container so we could make a small batch.
Just look at how ooey-gooey this stuff turned out!
It had that perfect caramel consistency and very closely matched the flavor.
Did it taste exactly like caramel? No.
Was it delicious and could accurately be described as caramely? Yes.
We dipped some honeycrisp apples in the stuff and could not get enough.
Also planning to serve it with some cinnamon ice cream later this week (pictures to come).
Do yourself a big favor and make yourself a batch of this no-heat caramel. You’ll be licking the spoon!
Recipe
No-Heat Vegan Caramel
Ooey gooey dairy-free caramel made with dates!
Coconut Milk, Coconut Oil, Dates, Vanilla,Ingredients:
- dates (pitted) - 2 cups (350 g)
- coconut milk (canned) - 1/2 cup (120 mL)
- coconut oil - 2 tsp. (9 g)
- salt - 1/2 tsp. (2.8 g)
- vanilla extract - 1 tsp. (5 g)
Instructions:
- Place all ingredients into Vitamix container
- Blend on high for 1-3 minutes
- Use the tamper to push ingredients from corners into the blade
- Check for smoothness, blend longer if necessary
- Serve with apples or on ice cream
- Snap a pic and tag #lifeisNOYOKE
- Enjoy!
Useful tips for No-Heat Vegan Caramel
This should be obvious, but make sure to use pitted dates.
The mixture will get warm, that’s okay! Just make sure you’re blending on high so the cooling system kicks in and protects the motor.
If you aren’t getting the smoothness you’re looking for, add a little bit of coconut milk at a time.
Would likely be very good with the addition of some cinnamon.

Thanks for an easy, yummy recipe! Have you tried this with miso (~1 Th)instead of salt? Add a little more umami.
