These Vitamix-Pulled Jackfruit Tacos are Awesome
Pulling jackfruit with a fork is fairly difficult and time consuming. But the Vitamix makes pulling jackfruit a breeze!
Here’s the simple method plus how we make pulled jackfruit tacos — delicious vegan street food!
Note: Do not be intimidated by the long list of ingredients. Jackfruit tacos can be made as simply or as complicated as you want. The recipe is just how we like to make them. The magic of using the Vitamix to pull the jackfruit apart is there however you prepare your tacos. 🌮
There's a lot to love about using jackfruit (as a pulled pork substitute)
Jackfruit is a special plant.
On its own, it’s sweet and almost tastes like pineapple.
But the magic is in its stringy texture. Especially when cooked, you can pull it apart and get a tender consistency and color like pork.
So for anyone that’s given up on eating meat, jackfruit is a great fit for a pulled pork substitute.
Recipe
Pulled Jackfruit Tacos!
Pulled jackfruit (the easy way), plus our jackfruit taco recipe!
Ingredients:
- JACKFRUIT
- jackfruit - 2, 20oz cans green jackfruit (in brine)
- TACOS
- tortillas - corn (most authentic) or flour (for chewier)
- SLAW
- purple cabbage - 2 cups, chopped or sliced
- mayonnaise - 1 TB (to taste) (we use a vegan mayo)
- (optional variation if you have time)
- green onions - 1/4 cup, chopped
- sugar - 1 tsp
- vinegar - white, 1 TB
- TOPPING IDEAS
- avocado - 2 whole, pitted, sliced
- green onions - 1/4 cup, chopped
- cilantro - 1/4 cup, chopped
- pickled onions
- (pickled onion ingredients)
- vinegar - red wine, 1 part
- water - 2 parts
- sugar - 1 Tablespoon
- queso - full recipe here
- (queso ingredients, all blended for 6 minutes on high speed))
- almond milk - 1 cup (240 mL)
- nutritional yeast - 1/4 cup (60 g)
- raw almonds - 1/2 cup (70 g)
- raw cashews - 1/2 cup (65 g)
- salt - 1.5 tsp (8 g)
- garlic powder - 1/2 tsp (1.5 g)
- onion powder - 1 tsp (2.5 g)
- crushed red pepper - a few shakes (to taste)
- red bell pepper (de-seeded)
Instructions:
JACKFRUIT
- Bake
- Drain cans of jackfruit
- Place onto cooking sheet
- Bake for 20 minutes at 350F
- Pull
- Option 1: Pull apart with two forks
- Option 2: Use your Vitamix (saves tons of time!)
- Add jackfruit to container (2 cups maximum at a time)
- Blend on Variable Speed 1 for 5 seconds
- Dress
- Add bbq sauce
- Toss around
- Bake (again)
- 20 minutes at 350F
- Mix by hand after 10 minutes
SLAW
- Chop cabbage:
- Option 1: By hand
- Option 2: With the Vitamix
- Golf ball size pieces
- Variable speed 1 for 5 seconds
- Use the tamper to guide
- Option 1: Quick
- Add mayonnaise
- Stir
- Option 2: Overnight
- Add vinegar, sugar, green onions
- Combine
- Let sit in the fridge overnight
QUESO
- Add ingredients to blender container
- Blend on Variable speed 10 for 6 minutes (or use Soup setting)
PICKLED ONIONS
- Option 1: Store-bought
- Option 2: Overnight
- Slice
- Place into jar
- Add water, sugar, red wine vinegar
- Sit overnight in fridge
TORTILLAS
- Warmed up in oven
OTHER TOPPINGS
- Slice avocado
- Chop green onions
- Rinse cilantro
- BBQ sauce

There are several ingredients and steps to make these jackfruit tacos. But don’t be intimidated; this recipe is actually quite easy!
And, aside from the queso, the ingredients list and quantities are all quite flexible. After all, they’re just tacos!

How much BBQ sauce? It’s listed under optional toppings, but in the directions it says to add it to the jackfruit before baking the 2nd time.

You call for red wine vinegar to make the pickled onions. Is that critical? Would white wine vinegar throw things off too much? Thanks.
