Fluffy Pumpkin Pancakes: Easy, Gluten-Free, and Vegan!
Here’s our easy pumpkin pancakes recipe. They’re fluffy, but gluten-free and vegan. They’re one of our Vitamix recipes, but a food processor will work just fine. Make ’em, they’re delicious!
These Autumn Aquafaba Pancakes are Pretty Great
We’ve been making oatmeal pancakes with aquafaba for a while.
And you know what?
These might be better than those.
Instead of using banana, we’re using pumpkin.
So if you’re a no-banana person, you might want to make these year-round.
There’s no flour, so they’re gluten-free and not messy to make. So easy!
Guys, make these pancakes. They’re fabulous.
Recipe
Pumpkin Pancakes
Fluffy Pumpkin Pancakes: Easy, Gluten-Free, and Vegan!
Ingredients:
- almond milk - 1 cup
- aquafaba - 1/4 cup
- pumpkin puree - 3/4 cup
- oats - 1 1/2 cups
- baking powder - 3/4 tsp. (6 g)
- cinnamon - 1/4 teaspoon
- pumpkin spice - 1/4 teaspoon
- dates - 1 or 2, pitted
- (optional) walnuts - to taste
- (optional) chocolate chips - to taste
Instructions:
- Add ingredients in order listed (liquid first).
- Blend on Variable Speed 10 for 20 seconds.
- Cook on pan over medium heat (a couple minutes each side).
- (Optional) Add walnuts or chocolate chips to top of each pancake.
- Serve and enjoy!

As a mama to two young kiddos I’m very anxious to try these for one, as a healthier alternative to pancakes and two, your note about making them in the oven. That sounds amazing! Any guidelines as to what temp and how long? I assume this would work with the original oatmeal pancake recipe as well? TIA!

Hi Sarah, yeah, 350 for 10-15 minutes should be good. We actually haven’t tried this method — have only heard from my sister who does it like this and swears by it. And yes, same with the original oatmeal pancakes recipe. Let us know how it goes for you and what you find? TIA!
