Creamy, rich and vegan hollandaise sauce made in a Vitamix
Hollandaise sauce is a staple for the brunching crowd.
It’s the star of the show on eggs benedict or any breakfast dish featuring salmon.
And it’s just as good simply drizzled on fresh steamed vegetables.
Too bad it’s terrible for you (and FAR from dairy-free)!
The classic hollaindaise recipe gets its creamy texture from butter and egg yolks. Â In this one, we’ll use an avocado to mirror that richness while still keeping it vegan.
This recipe is incredibly easy, no prep necessary and just 5 minutes from start to finish. Adapted from this one on the Vitamix website, it’s definitely a Vitamix recipe, although you can probably get by without one.
I’m using my Vitamix Pro 750 (in-depth review) and it’s secondary, 32 ounce container (because we’re not making a giant batch).

Vegan Avocado Hollandaise Sauce
Creamy, vegan hollandaise, perfect for brunching.
Avocado, Lemon, Olive oil,Ingredients:
- lemon juice - 4 Tbsp.
- hass avocado - 1 medium
- hot water - 1 cup
- salt - 1/2 tsp.
- pepper - 1/4 tsp.
- olive oil - 4 Tbsp.
Instructions:
- Peel, pit, and quarter the avocado
- Place the lemon juice, avocado, hot water, salt & pepper into your blender container
- Blend on high for one minute
- Add the olive oil slowly
- Blend again for 15-20 seconds
- Drizzle on everything

This is one of those “follow-the-recipe-and-don’t-wing-it” recipes. I generally don’t like to measure ingredients, but this one, you should.

Hmmm; so how would you adapt the Avocado Hollandaise to the Vitamix Aer unit?

Thanks for the recipe. Very yummy and excited to try a vegan option! For me I would say 1&1/2 lemons (1 lemon was about 5 Tbsp) and 3 Tbsp of olive oil. But I do like the tart taste. Life still can be tasty on fresh ingredients. Yay!
