Recipe
Carrot Cake Bites
A quick no-bake snack that tastes just like carrot cake!
Ingredients:
- dates - 1 cup (175 g)
- maple syrup - 1 Tbsp. (15 mL)
- carrots (shredded) - 1 cup (110 g)
- walnuts - 1/2 cup (65 g)
- pecans - 1/2 cup (65 g)
- cinnamon - 2 tsp. (5 g)
- flax seeds - 3 Tbsp. (21 g)
- chia seeds - 1 Tbsp. (10 g)
- oats - 1/2 cup (40 g) + 1/2 cup (40 g) to roll
- coconut - 1/4 cup (15 g)
- optional: white chocolate - 1/4 cup melted
Instructions:
- Add all ingredients into your Vitamix container
- Ramp from variable speed 1 to 10
- Blend on high for 30 seconds
- Mix the ingredients by using the tamper to push into the blade
- Keep some texture, you want to see pieces of nuts/carrots, etc
- Watch your blend closely, do not overblend
- If mix seems too moist, add more seeds and stir
- Roll mixture into balls with your hands
- Roll balls in oats or coconut so they don’t stick together
- Snap a pic and tag #lifeisNOYOKE
- Enjoy!

I have made this recipe before (it’s great). Now I want to make it in the food processor attachment. Seems like it would mix it a little better. Have you made this since you got your food processor attachment?
We haven’t made it yet but definitely agree that the food processor attachment may work even better for this recipe. Will update when we try it.
I tried it in the food processor attachment today. It made quick work of the mixture. I found it mixed a lot better. I always had trouble with my Vitamix getting the whole batch to mix. The one issue I found was that the balls did not form as easily. Maybe the Vitamix blender blades beat a little more moisture out of the ingredients. I will definitely make these in the food processor attachment from now on.

Hey Ryan if you add all the ingredients into the MyFitnessPal app, it will calculate the nutritional value for you. You can just copy and paste all ingredients and better the number of servings. Super easy! That’s what I’ve been doing. The detox salad will definitely help you drop pounds and it’s so yummy!!!

Just curious. I gave up white chocolate when I went plant based as it contains milk product. Have you discovered one that is plant based?
