This dressing is so addicting you’ll want to eat salads 3x a day.
To date, I haven’t been able to find anything like it at the grocery store. Although I’ve been served something similar in a trendy Uptown restaurant.
It couldn’t be any easier to make in a Vitamix and it tastes good on everything.
Grab the few ingredients and blend some up. Your dinner guests will give you a 5-star rating.

Dress to impress
I’ve been making this dressing for my dinner guests. It’s always a huge hit.
So flavorful, so unique (and shhh… so easy).
It starts with any Asian-inspired salad. Dress it up in it’s Sunday best and you’ve got a winner.

The original inspiration came from The Wicked Noodle’s blog. I absolutely loved her version of this dressing. But the process had more steps than I had the patience for (think blend, then boil down). In total, it was a 15 minute process… for dressing.
Worth it, because it’s absolutely delicious. Problem was I would only make it for special occasions.
With a little tinkering and with the help of our Vitamix, I got the process down to 3 minutes flat.
It’s just as delicious and much much easier. Now I can make it for any-ole lunch.

Coconut Curry Dressing
Savory and flavorful Asian-inspired dressing.
Coconut Milk, Curry, Garlic, Lime, Peanuts,Ingredients:
- coconut milk (low fat) - 1 cup (240 mL)
- peanuts (dry roasted) - 1 cup (125 g)
- garlic - 1 clove
- lime (peeled) - 3/4 of whole
- curry powder - 1.5 tsp (3 g)
- salt - 1/2 tsp (1 g)
- OPTIONAL: Sriracha - 1 Tbsp (20 g)
Instructions:
- Add ingredients to Vitamix container in order listed
- Blend for 2 minutes
- Pour on any Asian salad
- Snap a pic and tag #lifeisNOYOKE
- Enjoy
Useful tips for Coconut Curry Dressing
The salad we toss this with has kale, red cabbage, mango, carrots, cilantro, lime, and crunchy peanuts.

How long does the ‘dressing’ last for? Thinking of pairing with coconut rice and asparagus but know I will have plenty left over.

We usually keep homemade dressings in a sealed container for 7-10 days refrigerated.
Tiffany, you can try cashews, but the flavor of the peanut plays a pretty key role here.
What kind of coconut milk is used? Is it the kind in a can or the kind that replaces regular milk in the larger rectangle cartons? TIA!
Hi Sarah, the coconut milk is the kind you get in a can. You want that thickness. We buy the low-fat version otherwise it’s kind of a calorie bomb.
