Here's a Cauliflower Soup so Good you Might Cry

It’s easy, it’s healthy, it’s quick.

It tastes like the soup we were served at the nicest restaurant we’ve ever been to.

Here’s our vegan, noyoke take on creamy cauliflower soup. Definitely a Vitamix recipe, although any blender will do.

  • You're needed for: 20 minutes

Creamy cauliflower soup so good you might cry tears of joy.

Cashews, Cauliflower, Shallots, Vegetable Broth,

Ingredients:

  • cauliflower - one whole stalk
  • olive oil - 2 T
  • vegetable broth - 7 cups
  • garlic - 1 T, chopped
  • shallots - three, whole, chopped
  • raw cashews - 1/2 cup
  • salt - (to taste)
  • INSTANT ENHANCER
  • truffle salt - (just on top or instead of regular salt. turns a regular ol' soup into an out-of-this-world tasting experience)

Instructions:

TOOLS:

  1. Large pot.
  2. Blender (Vitamix not necessary).

PREP:

  1. Soak the raw cashews in water for a couple of hours.
  2. Chop shallots.
  3. Chop garlic.

SAUTEE:

  1. Bring pot to medium heat.
  2. Add olive oil.
  3. Add shallots and garlic.
  4. Sautee for a couple minutes (until soft and translucent).
  5. Add cauliflower.
  6. Sautee for five minutes (until a bit soft).

SIMMER:

  1. Add vegetable broth.
  2. Bring to a boil.
  3. Reduce heat.
  4. Cover.
  5. Simmer for 30 minutes.

BLEND:

  1. Remove from heat to cool for a minute (just so it’s not boiling anymore).
  2. Add cauliflower, broth, etc., to blender.
  3. Add cashews to blender.
  4. Blend for a minute (until smooth).
  5. If you have a Vitamix, blend for another minute or two to get it hot. If you don’t have a Vitamix, add it back to the pot and warm it up again.

SERVE:

  1. Garnish with chives and a bit of olive oil.
  2. Be happy.

Useful tips for Creamy Cauliflower soup

Anything in the onion family will do, but shallots get you the best result.

It’s rich and velvety, but if you’re a texture person, you can always add quinoa, rice, or even some roasted cauliflower.

    Can you skip boiling the cauliflower and add it raw to the Vitamix?

    Incredibly delicious cauliflower soup!! After reading through the comments about it being too thin, I only used 5 cups of veggie stock, and it turned out creamy & delicious!! The head of organic cauliflower was small (ended up with 400 grams of cauliflower), used 3 shallots (each shallot 40 grams), and 3 pieces of garlic (7 grams total). The chives on top were great. This will definitely go in my rotation of yummy soups!!

    I’ve found that a lot of these soups come out thin. This time I left out a bunch of the cauliflower before I blended it. Then added it back in and pulsed a few times. That seemed to help give it some texture. Yummy with the chives.

    Hi Lifeisnoyoke 🙂

    I just aquired a A3500 and did the first grocery shopping with your list. I tested that recipe and it came out super liquid and not really tasty. I ued a dried cube of vegetable broth with 7 cup of hot water. I missed the shallots and did it with onion I guess mught be for that.

    I also tried the green juice and its actualy pretty good that one 🙂

    As another commenter noted, this came out a bit thin. Not sure why but the color was also a bit darker

      Hmmm, one thing that varies is the size of the cauliflower head. Also, you can cook it on the stove to let it reduce and that should help thicken it up. Thanks for trying it

    I followed the recipe and quantity exactly but we find it too thin. 7 cups of stalk may be too much imo. I think if I try this again I’ll add some potato and leek to it as well for increased flavor.

    Tried this and 1st try came out great! Whole family loved it even my son who can’t stand most vegetables including cauliflower. I saved some and sauteed a little garlic and shrimp in real butter, and added them to the soup with some frozen corn. WOW! Very close to New Orleans style Shrimp and Corn Soup without all the calories of heavy cream. Thank you Lenny, this was the first time I used raw cashews and can’t believe the creamy texture! You are amazing and I love watching your videos!
