This recipe solves a common problem: what’s for breakfast?
When we’re unprepared, we end up making poor choices (like the drive-through or the office donuts).
But when we’ve got a plan, we usually stick to it the best we can.
Here’s your plan: make a batch of these blueberry cookie balls.
If you live solo, they will last you the entire work week. If you’ve got a family, one morning is handled.

Recipe
Blueberry Cookie Balls
Healthy, filling, and delectable quick breakfast.
Almonds, Blueberries, Cashews, Cinnamon, Dates, Oats, Vanilla,Ingredients:
- BLEND
- cashews (roasted, unsalted) - 1 cup
- vanilla - 1 tsp.
- dates (pitted) - 5 whole
- maple syrup - 3 Tbsp.
- cinnamon - 1/2 tsp.
- PULSE
- almonds (raw) - 1/4 cup
- rolled oats - 1 cup
- MIX
- blueberries (dried) - 1/2 cup
Instructions:
PREP
- If you are using raw cashews, roast on 350 for 8 min.
- Soak your cashews in water for 30 min before blending.
BLEND
- Add all ingredients to container under blend category.
- Blend on high for 2-3 minutes.
- Use the tamper to push from the corners into the blade.
- Blend until thick nut butter is formed.
PULSE
- Add the almonds and oats to the mixture.
- Pulse on variable speed 4 until combined (5-10 pulses w/tamper).
MIX
- Hand mix in the blueberries with a spoon.
FORM
- Form 1 inch balls by packing the mixture w/your hands.
- Refrigerate for 30 min before serving.
- Snap a pic and tag #lifeisNOYOKE
- Enjoy!
Useful tips for Blueberry Cookie Balls
This recipe is for a narrow-bodied Vitamix container. So a 32-oz, a 48-oz, or a 64-oz standard. If you’re using a low-profile 64-ounce container, likely the one that came with your Vitamix, you’ll need to double the recipe.
Make sure you’re processing on Variable Speed 10. Any lower and the thermal protection mechanism won’t activate and you could overheat your machine.

Holy moly!!! These things are amazing!! My 7 year old daughter was so excited to make this, she did everything except the tamper parts. She felt so good about cooking herself. Thank you!!! We will also be doubling or tripling the recipe next time because between my 3 kids they leave any for the week, they ate them all in a day ☺️

We almost always have to double the recipe too, they just get eaten up so fast!
I’ve made these about 3 times and I think I must forget about the amount of time this really takes between trying to get ingredients to blend and the clean up. My husband likes these alot, but might be the last time. i doubled the recipe, but the tamper is no assistance as it just doesn’t reach the ingredients enough to push anything down into the blade, so i have to keep stopping and using a spatula to push things down, took forever to get the almonds chopped up in there. Then cleaning the blender after to get the nut butter under the blade, just ughhhh. FYI – unrelated, your choc chip banana bread is the best I had in my life and sooo easy.
These are definitely more high maintenance than most of our recipes. Perhaps soaking your dates and cashews would help ease the ingredients down? We find that leaving the container in the sink with hot soapy water for a bit helps break down the gunk and then the cleaning cycle should take care of the rest.

Amazing! Loved the texture and taste, plus grab-and-go convenience. Our Vitamix did overheat while making it, but that was probably because I pulsed 20 or 25 times instead of 10, plus doubled the recipe for the 64-oz low profile container. Either way, definitely a go-to snack recipe!
Takes a little bit of practice to get these right. Our Vitamix shut down to protect itself from overheating the first time I doubled the batch too. Just make sure you’re really working the tamper from the corners into the blades.

Love your recipes! I look forward to making this recipe. When you use dated in a recipe could you say: use 5 whole dates/2ounces dates? I am a weigh in the scale sort of person.

If there isn’t an exact weight for the ingredients, usually it means it doesn’t matter exactly how much and it’s fine if it’s a bit off. If you want to be super exact though, you can just google how much one date weighs (7-10 grams).
Hi Pattie, Kal is right. This isn’t one of those recipes where you have to be exact at all. For this recipe about 40-50g should do the trick.
Can I use any other nuts like walnuts instead of cashews?

If you soak them first and blend really well. The cashews are the glue holding these together so another nut should work as long as it can be blended into a nut butter consistency.

I used my 32 oz container, which fit perfectly. The only problem is: I had no idea how GOOD these bites would be….now I wish I’d used my 64 oz container and quadrupled the recipe! Love these balls!
Haha! We went a few months without making them and made the same mistake. Now we always use the quadrupled recipe 🙂
I’m just getting starting with my new Vitamix, so I have a couple of questions.
Do you use cold, warm or hot water to soak cashew in?
Do you drain the water from the cashews after soaking them for 30 minutes?

We usually use warm water and then drain.
I made these before heading off on a trip with my family and I must assume we had the best snack while on the plane and in the airport. Great with coffee and yes doubled it for larger size vitamix.

Really good but had to double recipe otherwise nuts were mostly just sitting under spinning blade and tamper was no help. Will make again in the 48 ounce container. Yum!
