This artichoke dip is the absolute best (and it's dairy-free!)

This is a hot, “cheesy”, gooey, artichoke dip you can make to share. And there’s a good chance it will be the best thing served.

Nobody needs to know it’s dairy-free and vegan.

In fact, introduce it as “our awesome artichoke dip” for best reception (instead of leading with its dietary benefits). “Here’s our vegan artichoke dip” won’t be as well liked no matter how good it is.

Go make this artichoke dip. All you need is a blender, and any blender will do.

The story behind this artichoke dip (circa 2017)

It starts pretty simply. Some cashews in our Vitamix.

Vegan melted cheese ingredients Vitamix a3500.But then things escalate quickly. And I get really REALLY excited for this dip.

Although we have lots of dips and spreads in our Vitamix recipe index, this one is a favorite.

When I pop it into the oven I almost always perform an “ERR-MER-GERD” dance (see below).

I originally wanted to make a dip to impress Lenny’s family. But most of my repertoire included dairy and my new boyfriend was dairy-free.

When I don’t know what to make, I consult Pinterest (you can follow us here).

I found this delicious recipe for spinach artichoke dip on itdoesnttastelikechicken.com and gave it a try. It turned out so well!

But not perfectly.

So I made it again.

Closer.

It took us 5+ times, but we think we have the right method/ingredients now to make the perfect dip.

Here’s what it looks like when it’s done. Yum!

The trick here is to make some melty vegan cheese first.

We tried to experiment and make our own version.

But pretty much everyone that makes vegan melty cheese makes it this exact way. It’s chemistry after-all.

Once you’ve made the cheese, you add the veggies, bake, and serve.

I’m a little calmer now that it’s out of the oven (but still very excited to get my dip on).

  • Until it's done: 45 minutes

The absolute best artichoke dip (100% plant-based)!

Apple Cider Vinegar, Cashews, Nutritional Yeast, Spinach, Tapioca Starch,

Ingredients:

  • "CHEESE"
  • raw cashews - 3/4 cup
  • water - 2 cups
  • tapioca starch/flour - 7 Tbsp.
  • nutritional yeast - 2 Tbsp.
  • apple cider vinegar - 2 tsp.
  • salt - 1 Tbsp.
  • garlic powder - 1 tsp.
  • DIP
  • marinated artichoke hearts - 1½ cups
  • medium yellow onion - 1/2 whole chopped
  • garlic - 5 cloves minced
  • frozen spinach - 2 cups
  • unsweetened almond milk - 1/2 cup
  • salt - 1 tsp.
  • pepper - to taste
  • crushed red pepper (optional) - to taste

Instructions:

PREP

  1. Preheat oven to 400
  2. Chop the onion and artichokes, mince the garlic

BLEND

  1. Add all ingredients under “cheese” category into your Vitamix container
  2. Blend on high for 2 minutes
  3. Transfer to a small pot and cook on medium for 5 min
  4. Stir often
  5. Turn off heat when the cheese is stretchy off the spoon (picture above for your reference)

MIX

  1. Add all ingredients under the “dip” category into an oven-safe dish
  2. Mix in the cheese until it is spread evenly throughout (it will be lumpy)

BAKE

  1. Bake for 15 minutes
  2. Stir
  3. Bake for another 15 minutes
  4. Turn on your broiler and broil the top for 2-4 minutes (watch closely)

SERVE

  1. Let it cool for 5-10 minutes (the roofs of our mouths learned that the hard way)
  2. Serve with veggies, bread, or chips

Useful tips for Artichoke Dip

Here’s a few tips (after quite a bit of trial and error).

Stop cooking the "cheese" when it has this consistency. You want it to be stir-able with the other ingredients.

It's tempting to make a couple of these and freeze one. Don't. We've found that the texture is slimy if you freeze and bake this recipe. Make it fresh, eat it straight out of the oven.

    This is AMAZING!!! Pretty simple to make and tastes amazing. I brought it to a vegan potluck and my dish was emptied. I thought that as it cooled it maybe would get hard or rubbery or something weird but it did not. When I brought the dish home and was scraping out the cold, tiny bits left, they were still soft and yummy.

      Follow all of the instructions for PREP, BLEND, and MIX. But instead of BAKE, put everything in the crock pot.

      I’d put it on high for at least 60 minutes, give it a stir halfway through.

    Please advise, I;m attempting to make your spinach dip and was unsure if the frozen spinach should be defrosted and all of the excess water should be removed or do I just out the frozen spinach in the vitamix as is? Thanks!!

      Frozen spinach should stay frozen. But it doesn’t go in the Vitamix. You’re making the “cheese” in the Vitamix and then adding the artichokes, spinach, onions, etc to mix in by hand (you want big chunks).

    My wife misses artichoke dip big time so I was excited to make this for her. Blew her mind, so good, no chance of freeze this since we killed it in one sitting. I thought about finding a substitute for the tapioca, having never used it before. Glad I didn’t though, there’s some magic going on there when it cooks on the stove.

      We legit get excited when the mixture starts to come together on the stovetop. Felt the same way about investing in tapioca, but now this recipe is a staple and we go through it pretty quick!

    Mine is in the oven… I will stare at it until the oven beeps. Since I am “all in” Vitamix I chopped my onion in their too 🙂 Who needs to cry and dirty a knife? Once the cheese went into a pot, I chopped my onions, garlic and most of the artichokes in the Vitamix! 13 min left…

      Go Lan! By the way, the only thing that makes this artichoke dip “unhealthy” is if you use bread or pita chips as your vehicle. Try with carrots or celery!

    Downstairs neighbor “Neighbor Dan”, a classically trained chef and definitely not a vegan, just gave us this unsolicited feedback about this artichoke dip:

    “That artichoke dip was fabulous. It was better than any artichoke dip I’ve ever gotten at a restaurant.”

    Does that mean he’s made better on his own? Does it matter?
