2. Desk Breakfasts
It’s our busy season. So I’ve been eating breakfast at my desk.
Here are a couple to consider:
Green juice with smoothie bowl toppings.
And acai bowl to go.
3. Dinners tonight
We sure ate well this week. Here are a few highlights.
Wild Rice Soup! Because winter is coming. (Couldn’t catch a good pic from last night’s dinner, so here’s the one from the recipe post.)
Jackfruit Tacos. We don’t have a recipe post for this, but it’s super easy. Bake canned jackfruit and shred with a fork (or in your blender on low speed for a few seconds). Taco-ize. This is Shalva’s perfect nacho bite since we had to audible from bogus tortillas.
Spring rolls. Another one we haven’t found the time to create a recipe post for. But our Thai Peanut Sauce is the key and is also good on plain ol’ pasta.
4. Potluck Brings
Brought Shalva’s Triple Ginger Chocolate Cookies to our niece’s first birthday party. They were all eaten before I could snap a pic. Here’s the original post’s.
And of course, Cashew Queso. It’s been a little while since it was in our newsletter. Fun now that our baby eats it, too.
(Wait, this picture makes our queso look like baby food. It’s not. It’s sophisticated and impressive!)
5. Articles, links, and other goodness we’re appreciating
This week I was asked for a calorie-rich smoothie that would help a toddler gain weight. I said almond milk, peanut butter, berries, flax seed, chia seed, dates, and oats. And I also said we have a YouTube video for that! Watch: 5 High-Calorie Ingredients, 1 Tasty Smoothie
